Combine all the ingredients in a bowl and whisk well.
1 tsp. black pepper, 1 tbsp. salt, ¼ cup ginger, 1 tbsp. coriander, 1 tbsp. cumin, 1 ½ tbsp. brown sugar, 1 tbsp. garlic powder, 1 tbsp. sesame oil, 1 tsp. dried oregano, 1 tbsp. paprika
Marinate fish in the seasoning mixture for at least 30 minutes before cooking.
Notes
Keep the seasoning in an airtight container, like a glass jar with tight fitting lid, to prevent moisture from getting in and affecting the flavor.Label the container with the date you made the seasoning so you know when its time to make a fresh batch. One batch works good for about 6 months.Over time the color of paprika might fade slightly. This is normal and does not affect the flavor or safety of seasoning.
