Green onion kimchi recipe is created with tender green onions, a variety of seasonings, and a special kimchi paste made from gochugaru which is Korean chilli powder.
Chop the green onions into 1-inch pieces with a knife.
In a large bowl, combine the Korean red pepper flakes, glutinous rice flour, water, sugar, salt, minced garlic, and minced ginger. Stir it thoroughly until the mixture combines. There should not be any lumps in the mixture.
Now pour chopped green onions into the mixture you have just prepared. Mix them with the mixture until they are completely coated with the sauce.
Transfer the kimchi mixture to a clean glass jar or container. Press down on the kimchi to remove any air pockets.
Seal the jar or container tightly and store it in a cool, dark place for at least 3 days. The kimchi will continue to ferment and develop flavor over time.
