First, we will cut the veggies.Cut the potatoes in the shape you like. I am going to cut them just like lays but do not cut them in thin slices. Keep the slices medium thick.Also. cut onions. Again cut in bigger slices so that they remain tender and you can feel their crunch when you eat.Also, chop green chilies and cilantro. Take green chilies according to your taste preference and how much you would like.
Now in a pan heat the cooking oil.
Now add the chopped vegetables except cilantro. Cook for one minute and add all the spices. You have to adjust spices according to your taste I am adding one tsp of red chili powder and half tsp of salt. Mix all the spices.
Now cover the pan and cook them over low heat. Cook them until potatoes are soft. Keep them stirring after every 3 minutes. Please stir them carefully otherwise all of your potatoes will be torn.
Your pan-fried potatoes and onions are ready. Top them with cilantro and enjoy!!
