In a large bowl combine cottage cheese, flour, baking powder, and salt.Mix until a dough forms.
Turn the dough out onto a lightly floured surface. Knead for 1 minute to make a smooth ball.Cover the dough with a damp cloth and let it rest for 10 minutes.
Divide the dough into four equal portions and roll out the dough into a flatbread.
Preheat a large skillet or griddle over medium heat. Brush the flatbreads lightly with olive oil and carefully put bread over the griddle.
Cook the flatbreads for 2-3 minutes per side or until golden brown and slightly puffed.Enjoy with your favorite toppings!
