Thai Fried Rice Satay Recipe

Ingredients:

For the Satay:

  • 1/2 lb. boneless skinless chicken cut into 1 inch cubes or strips
  • 2 tbsp. satay sauce
  • 1 tbsp. soy sauce
  • 1 tsp ground coriander
  • 1/8 tsp chili powder
  • 1 tbsp. vegetable oil
  • 1 pinch salt

For Fried Rice:

  • 2 tbsp. vegetable oil
  • 1/2 large onion chopped
  • 5-7 cloves of garlic minced
  • 1/2 cup cooked rice
  • 2 tbsp. chopped cilantro
  • 2 tbsp. chicken broth
  • 1 tbsp. fish sauce
  • 1 tbsp. sugar
  • 1/4 tsp. ground black pepper
  • salt to taste
  • 1 tbsp. lime juice

How do I make Thai Fried Rice Satay?

In a bowl combine chicken, satay sauce, soy sauce, coriander, cumin, chili powder, and vegetable oil.

Marinate for at least 30 minutes.

In a wok heat some oil and add the minced garlic and chopped onion.

Cook onion and garlic until softened. It takes about 3-4 minutes.

Add the chicken which you marinated earlier and let stir it to cook thoroughly.

Now add the cooked rice and stir in cilantro, fish sauce, sugar, pepper, and lemon juice.

Cook for 2-3 minutes until rice are coated evenly with the sauce. Transfer to a bowl and enjoy with sweet chili sauce and cucumber slices.
