Kumpir: potato bake recipe
Kumpir Ingredients
- 2 large potatoes (russet or similar)
- 1/4 cup butter
- 1/2 cup milk
- 1/4 cup grated cheese
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh dill
- 1/4 cup sweet corn kernels
- 1/4 cup chopped olives (green or black)
- 1/4 cup chopped tomatoes
- 1/4 cup Turkish sausage (optional)
- Salt and pepper to taste
Turkish Stuffed Baked Potatoes: Kumpir Recipe
First we will prepare the potatoes. Wash and scrub the potatoes well . Preheat your oven to 400 fahrenheit.
Cover the potatoes with aluminum foil and place them in oven. Bake them for about 1 hour and 15 minutes or until they become soft.
Now let’s prepare the filling. While potatoes are baking cook the diced turkish sausage in a skillet over medium heat until they get brown. Drain any excess grease.
Once potatoes are cooked. Carefully cut a small opening on the top. Scoop out a little bit of potato flesh, leaving a small hollow.
In a bowl, combine the softened butter, milk, grated cheese, feta cheese, parsley, dill, and salt and pepper to taste.
Add the cooked sausage, corn kernels, olives, and tomatoes to the creamy cheese mixture.
Gently mix the scooped out potato flesh with the filling and stuff it back into the potato.
Kampir is ready. Serve Turkish stuffed baked potato warm.
